This week's restaurant spotlight is on Restaurant ECHO, located at 1740 Pennsylvania 228 in Cranberry. Opened in December 2010 at the former Hereford & Hops Steakhouse & Brewpub, Restaurant ECHO is co-owned by Ron Hammond and his son, Brian Hammond. Brian Hammond, a Seneca Valley High School grad, also is the restaurant’s executive chef. Prior to opening Restaurant ECHO, he worked at several upscale restaurants in Chicago, including the Rick Bayless-owned restaurants Frontera Grill and Topolobampo. The chef de Cuisine at Restaurant ECHO is Chris O’Brien, who has close to two decades of experience in the hospitality industry, including work as executive chef at the Hyeholde Restaurant in Moon. Restaurant ECHO in Cranberry is launching its first-ever food drive to benefit the Greater Pittsburgh Community Food Bank. Opened in 2010, Restaurant ECHO employs more than 40 people in the Cranberry Township area. In addition to producing breads, desserts and stocks in house, the restaurant also tends herb and vegetable gardens and has three beehives on the property along Route 228. “As a member of the restaurant community, we serve food every day. Ultimately, though, eating at a restaurant is a luxury,” said Nicole Hammond, private events coordinator at the restaurant. “When we know that our neighbors are not food secure, it call us to action. Do you know where you’re taking Mom for Mother’s Day next Sunday? You may want to consider treating her to one of these suggestions. For this week’s Readers’ Choice poll, we asked residents to vote for the restaurant in the Cranberry area that serves up the best Mother’s Day brunch. Although we didn’t get a ton of votes, we did have a winner. Restaurant Echo came in first place with 27 percent of the vote. There was a four-way tie for second place between Siba Cucina, North Park Lounge, Domenico’s and Treesdale Country Club.
