This week's restaurant spotlight is on Restaurant ECHO, located at 1740 Pennsylvania 228 in Cranberry. Opened in December 2010 at the former Hereford & Hops Steakhouse & Brewpub, Restaurant ECHO is co-owned by Ron Hammond and his son, Brian Hammond. Brian Hammond, a Seneca Valley High School grad, also is the restaurant’s executive chef. Prior to opening Restaurant ECHO, he worked at several upscale restaurants in Chicago, including the Rick Bayless-owned restaurants Frontera Grill and Topolobampo. The chef de Cuisine at Restaurant ECHO is Chris O’Brien, who has close to two decades of experience in the hospitality industry, including work as executive chef at the Hyeholde Restaurant in Moon.
